The Best Guacamole EVER

If you know me, you know  that there’s nothing I like more than Mexican cuisine. To my surprise and delight, tacos have become all the rage lately, as Kate recently mentioned. But sometimes, nothing beats home-made taco night. Whether you go traditional with ground beef or try something a little less traditional, like cod, as we did over the winter, tacos are always a crowd pleaser.

And what goes perfectly with tacos? You guessed it – guacamole. While it’s good from the store, nothing beats a freshly made batch to go along with your freshly made tacos. Luckily for me, one of my best friends (and one of inanutshell’s number one supporters) Kelly, makes a killer guac and shares the wealth with me on a regular basis. And now, she’s graciously shared her recipe so that you too can take advantage of this delicious and simple summer treat!

What You’ll Need

-3 ripe avocados – peeled, pitted, and mashed
-1 tsp salt
-1 lime, juiced
-1/2 cup diced onion (equals on average 1 small onion)
-2 roma tomatoes, diced (also called “plum” tomatoes)
-1 tsp minced garlic
-2-3 tbsp fresh cilantro, chopped (optional)

Instructions:

1. In a medium bowl, mash the avocados.

2. Add lime juice and salt.

3. Mix in onion, garlic and tomatoes.

4. Stir in cilantro if you choose to use it.

5. Cover with plastic wrap and refrigerate for 1 hour prior to serving for best flavor.

Et voila! Use this to top your favourite Mexican dish or serve with tortilla chips as an appetizer. Thanks for sharing Kelly!

    leave the pit in the serving bowl to keep it from going brown!
