Super Simple Pulled Pork Sliders

More often than not, I’m cooking for myself. And that can easily lead to making a quick salad, sandwich or melange of whatever’s left-over in the fridge. But, when I’m actually cooking for two (or more!), I have to put a bit more thought into it. The problem is that even if I put more thought into it, doesn’t necessarily mean I have tons of TIME to execute a complex recipe. Enter, my slow-cooker.

I’ve talked about using my crock pot many times here on the ‘shell and I’m about to do it again. Honestly, there’s nothing better than throwing ingredients into it in the morning and coming home to a mouth-watering supper. Your dinner companion(s) won’t have the slightest clue that you spent less than 10 minutes whipping up such a mouth-watering dinner.

Ingredients:

  • Pork tenderloin
  • 1 355 mL can of Coke
  • Your favourite barbecue sauce
  • Buns
  • Desired Fixings

Directions:

  • Combine pork tenderloin and 1 can of Coke in the slow cooker (I know this sounds strange, but it works!). Cook on low for 5-6 hours.

Cooking Pulled Pork

  • Remove pork from slow cooker and pull it with two forks.
  • Keep 1 cup of the drippings aside and drain the rest from the slow-cooker.
  • Place pulled pork, 1 cup of drippings back in the slow cooker.

Pulled Pork

  • Add in 2-3 cups of your favourite barbecue sauce (I used a mixture of sweet and smokey sauces). Cook for 1 hour on high.
  • Serve pulled pork on sliders with an extra dollop of BBQ sauce. Adding lettuce, coleslaw, cheese and other fixings are optional, but encouraged!

    Meghan – you (and pulled pork) make me the happiest. We might be in NYC in December 2014 – is that too far to recapture the magic of a certain bus trip?
    Meanwhile – do you think I could leave the pork in the slow cooker for closer to 8 hours (would usually be away from the house for at least that long)…?

      I’m sorry, I completely missed your comment! I believe the pulled pork should keep if you set it on low for 8 hours. Personally, I haven’t tried it, but I bet that it would still cook fantastically.

      As for a visit in December 2014 – we would LOVE to see you and recreate some magic!
