It’s almost the end of January…have you fallen off the New Year’s Resolution wagon yet? If you fall into the large category of people that made resolutions that revolved around health and wellness, chances are you were hoping to start (or continue) eating healthy meals. While you can certainly go the lean protein and steamed veggies route, it’s much more fun to devour healthy meals that are full of healthy ingredients AND flavour. In an effort to motivate our readers to keep up their healthy cooking and eating, here are a few tried, tested and true recipes to work into your repertoire…
Seriously, when Kate blogged this recipe last year she revolutionized my life. While they can totally be called burgers, I end up eating mine sans bun, with a bit of cheese melted in and with a red pepper greek yogurt dip. Mashed together I guess it’s more of a casserole than a burger, but however you like it – YOU’LL LOVE IT.
2. Taco Stuffed Zucchini Boats
Mexican food makes me the happiest and tacos are one of my absolute favs.But sometimes I crave the taco taste without the carb-heavy shells. Enter: zucchini. I made a ground-turkey taco filling and used hollowed out zucchini rather than a traditional corn shell or tortilla. I love this recipe, but I found that boiling the zucchini prior to baking it left it a little bit soft for my liking, so I would recommend skipping that step and simply baking them!
3. Burrito Bowl
…Again, with the mexican love. But can you blame me?? This is so fresh, filling and colourful! Plus, you can use this recipe for homemade mango salsa. I’m drooling thinking about this one.
4. Old Faithful: Avocado Salad
I first blogged this recipe back in 2013 and I still make it from time to time because it’s so simple, but so satisfying. Plus, I usually have everything I need to make it, so it’s easy to whip together on the fly!
