Cooking in Kate’s Kitchen

Sometimes, all you want is to come home to a home-cooked meal. Nothing beats sitting down at your family dinner table for a meal prepared by Mom. But, when you live on your own and lead a hectic life, like all of the nuts, home-cooked meals are often a last priority.  So after a 7 hour day in class and a heavy-duty cleaning spree in my apartment, I decided to surprise those near and dear to me with a home-cooked meal. I had mentioned to a friend of mine in class that I wanted to cook a meal to impress, something you could order at a restaurant perhaps, without the price tag. What she suggested was a huge success, relatively cheap and extremely easy to prepare. If you’re hoping to prepare a meal to impress this recipe is  a sure bet. . .

What you’ll need (Serves 2):

2 salmon filets,skinned

1 small package of smoked sockeye salmon

1 bundle of asparagus

1 bag of baby potatoes

2 cloves of garlic, crushed

1/3 cup of 18% table cream

Oregano

1/3 cup of Olive oil

1/3 of Dijon

1/3 of Grainy Dijon

Salt & Pepper

Preheat oven to 350°f

1. In a bowl, stir in cream, olive oil, dijon and grainy dijon. This is the basis of your marinade. Add a dash of oregano, garlic, salt and pepper. Mix well.

2. Wrap each salmon filet in the smoked salmon and place in a medium sized pyrex dish.

3. Drizzle the marinade over each filet so that they are smothered in deliciousness.

4. Insert into oven. Cook for 25 minutes.

5. Meanwhile, boil potatoes in a large skillet for approx 20 minutes. I like to fry my baby potatoes in olive oil and garlic afterwards for a bit of extra flavour. In a second skillet, boil asparagus.

6. When plating the salmon, drizzle any extra marinade atop of asparagus.

Serve with a Grenache Roussanne blend and you’re tastebuds will be dancing! Bon Appetit!
